The vineyard comprises several \u003cem\u003evigne \u003c\/em\u003e(smaller plots) of bush (freestanding or albarello) vines, aged between 46 and more than 100 years, harvested by hand. The grapes in this wine are harvested from the younger vines and are allowed to spontaneously ferment. The first 'free-run' juice or \u003ci\u003efiore\u003c\/i\u003e is collected before the grapes are softly crushed in a manual wooden press. The juices are then combined for fermentation to continue under controlled temperatures in steel vats.
