Tasting: A well-structured red wine whose fresh and fruity taste belies its strength! Good balance of acidity, tannins and minerality derived from its unique growing conditions and artisanal, organic process.  Goes well with: Take pleasure in enjoying this wine on its own or paired with soft cheeses and vegetable/legume-based dishes. Serve: room temperature. 

Story: La Casa di Sophia is an extraordinary organic vineyard where vines grow in the sands of the Sant'Antioca peninsular in the South West of Sardinia. The vineyard comprises several vigne (smaller plots) of bush (freestanding or albarello) vines, aged between 46 and more than 100 years, harvested by hand. The grapes in this wine are harvested from the younger vines and are allowed to spontaneously ferment. The first 'free-run' juice or fiore is collected before the grapes are softly crushed in a manual wooden press. The juices are then combined for fermentation to continue under controlled temperatures in steel vats. The wine is cleared by racking and mechanical filtration.
